P.S. One of my several birthday dinners was at Dame last year, and I couldn't stop thinking about their squid skewers. Ended up (almost) reverse-engineering the recipe :)
What do you mean by "The traffic-starved West Siders in line here are often the worst of Los Angeles"? Is this a substack exclusively for those that live east of the 405?
I went to Le Grand Café on my last trip and was in awe — the way platters of butterflied shrimp and bowls of aioli fly through that room, the sheer size of the staff… & I’ve noticed the pen thing, too, my take is it’s overplayed, so restaurants are backing off? Bistrot Ha has a cool one though, it’s lipstick red
Drinks at Vandell in LA make me feel like I'm at Bar Clemente, a must-include on the new LA "out and dining" list. Although the line is already insane, so maybe don't share it yet :)

not trying to make you wrong about dining in LA but it's so freaking expensive i don't really see how it could be "back" for most people...
